"Butterbredle" - small shortbread biscuits

Preparation time: 10 minutes. Resting time 2 hours. Cooking time: 10 minutes per batch.


Ingredients for 900g:

250g of flour

125g of sugar

125g of butter (cut into small pieces)

4 egg yolks

1 egg yolk diluted in a little milk to make an egg glaze for brushing


Instructions

Sift the flour, make a well and add the sugar, eggs, and butter cut in small pieces.

On a floured surface, knead the mixture well and form a ball with the dough.

Leave to rest for 2 hours.

Roll out the dough in a thin layer and cut out biscuit shapes with a cookie cutter.

Brush with the egg glaze, and bake for 5 to 10 minutes in an oven pre-heated to 200C.


Marbled shortbread

Preparation time: 20 minutes. Cooking time 8 to 10 minutes per batch.


Ingredients for 800g:

250g of flour

150g of butter (cut into small pieces)

1 teaspoon of baking powder

100g of sugar

1 sachet of vanilla sugar

1 pinch of salt

1 tablespoon of water

30g of cocoa


Instructions

Sift the flour and yeast.

Make a well in the mixture.

Add the sugar, salt and water and mix in with a little flour.

Add the butter and knead everything quickly.

Remove 1/3 of the dough and add the cocoa.

Roll out the plain dough and then the chocolate dough.

Place them one on top of the other and roll them up. Put in the fridge to firm up.

Cut into thin slices and place on a greased baking tray.

Bake in an oven pre-heated to 200C for 8 to 10 minutes.


Shortbread with jam

Preparation time: 10 minutes. Assembly 40 minutes. Cooking time 8 to 10 minutes per batch.


Ingredients for 1kg:

250g of flour

2 level teaspoons of baking powder

90g of sugar

1 sachet of vanilla sugar

1 pinch of salt

A few drops of lemon juice

1 egg

120g of butter (cut into small pieces)

Raspberry jam

Icing sugar


Instructions:

Make a well in the sifted flour-baking powder mixture. Add the sugar, vanilla sugar, salt, lemon juice and egg. Mix everything together.

Add the butter and knead quickly. Form a ball and leave to rest in a cool place.

Roll out the dough and cut out discs with a cookie cutter.

Bake in the oven at 190C for 8 to 10 minutes, on a greased baking tray.

Leave to cool. Brush one disc with jam, sprinkle the other with icing sugar and place it on top of the first disc.
