Quick and Chewy Amaretti Cookies

These cookies are fast, easy, and delicious. A dear friend shared the recipe with me, and I have fond memories of sitting down and having coffee and these amaretti cookies together in the kitchen. At a time when it is difficult to get together in person, the taste and fragrance remind me of happy times.
Ingredients
· 200 grams finely ground almonds (use blanched almonds)
· 200 grams confectioners / powdered sugar / icing sugar
· 2 egg whites
· ½ teaspoon almond extract
· ½ teaspoon vanilla extract
Instructions
1. Preheat the oven to 180 ° C.
2. Prepare your baking tray with a sheet of baking parchment paper.
3. Put the ground almonds, sugar, egg whites, and extract in a food processor.
4. Blend for 2 minutes, or until the dough is smooth and well mixed.
5. Using a spoon, place the dough on the baking tray in 12 evenly sized mounds.
6. Bake for 20 minutes, until lightly browned.
7. Let cool on a wire rack.
